Mango and Coconut are kind of symbol of Thai fruit. Those are very popular and eaten by people in anywhere.

If you love tropical fruit, you would love this sauce!!!
This sauce can be used as dip for calamari, spring roll, cooked shrimp, and whatever you feel like to!

* MAKES about 1 cup mango sauce/dip
* 1 ripe mango (see below for mango tips)
* 4 Tbsp. thick coconut milk
* 1 heaping tsp. palm OR brown sugar
* 1 Tbsp. fish sauce (if vegetarian, substitute 1/4 tsp. salt)
* 1 Tbsp. lime juice
* 1/4 to 1/2 tsp. dried crushed chili

1. Scoop out the mango fruit and place in a food processor, blender, or chopper.
2. Add all other ingredients. Process to create a delicious mango sauce.
Tip: Avoid over-processing, or you'll end up with a mango drink (!).
I like little chunks of mango in mine, so I blitz it just long enough to get an applesauce-like texture.
3. Do a taste-test. Depending on the ripeness/sweetness of your mango, you may have to add a little more sugar. What you want is a balance of sweet, salty, and spicy, with just a touch of sour.
4. Serve as a dip with your choice of appetizers
